Homemade Chicken Shawarma

Healthy grilled chicken shawmarma

Homemade Chicken Shawarma for those times you fancy a kebab. Recently with all the local takeaways closed this has been a lifesafer for the kebab monster. Bonus is these area cheap, tasty and because of the amount of fruit, salad and the ease of making a healthy probiotic sauce to go with it relatively healthy too.

I make these in the grill and an electric griddle pan works well too. During the summer it can even be done on the BBQ. It goes great in pitta or other flatbread or with salads.

Ingredients

For the Chicken

  • 500g of chicken thighs (filleted and skinned)
  • Juice of 2 lemons
  • 50ml of olive oil
  • 2 cloves of Garlic
  • 1 tsp of ground cumin
  • 1 tsp of ground Cinnamon (i like cinnamon so add more)
  • 1 tsp of ground coriander
  • 2 tsp of sweet smoked paprika
  • 1/2 teaspoon of chili powder (more if wanted)
  • 2 bay leaves, crumbled up
  • salt and pepper
  • 1 tsp Tumeric (optional, but may have a host of useful benefits. so why not?

For the Shawarma Wrap

  • Any flatbread. If you can get middle-eatern/Lebanese style great. If not a plain nan or maybe even a Mexican stlye wrap
  • Hummus/yoghurt/Garlic sauce. something to add a little juiciness
  • Carrot salad (YouTube video)
  • Prepared Veg: This can be anything, for ease, a simple salad bag, to cucumber, lettuce, cabbage, red cabbage, onions and chilies. It's not uncommon to find pickled turnip (which is great!) and other pickled vegetables

Optional

  • Pomegranate Seeds: just for that little sweetness
  • pomegranate molasses: completely unnecessary but once you've had it It isn't right without it
  • Some Hot Sauce: You know it makes sense!

Method

  • Pour the lemon juice and oil into a bowl and whisk together. Then add the garlic, spices and bay leaves to make the marinade. Mix the marinade thoroughly then add the chicken, rubbing in using your hands.
  • TIP, Some people don't like the feel of the chicken. So tip everything into a food bag, seal and then massage everything together through the bag
  • Cover the bowl and leave to marinate in the fridge for a few hours or overnight if you have the time
  • Take out of fridge and allow to come to room temperature before threading on skewers
  • TIP, I use two skewers. I find it easier to turn the chicken and it also stops it rotating making it easier to ensure even safe cooking.
  • Pre-heat the grill and grill under a medium heat turning frequently for 20-25 minutes or until cooked through.

Assemble the Shawarma

Let the cooked chicken rest for 10 minutes. It always seems to slice easier if you do this. then slice the chicken into pieces

Warm up the bread in the oven or under the grill.

When the bread is read, spread your hummus or live natural yogurt on.

Spread the carrot salad over the top, followed buy the other veg.

Place the sliced chicken on and sprinkle the pomegranate seeds over followed by the some of the molasses or hot sauce

roll up and serve/eat…
