Leek Salad

A Prebiotic salad made from leeks. Great any time of the year as a side salad or in pitta with grilled meat or halloumi

4 to 6 as a side dish

This is a little a bit of a surprise. Raw leeks in a salad? Its works well has a great fresh taste and goes with so many types of food.

I’m often asked for the recipe so, here it is. Raw leeks are considered by some to be  a probiotic and great for encouraging health gut bacterial growth if combined with other healthy lifestyle choices..So why not make it and give your guts a chance?

Ingredients

  • 3 Leeks
  • 1 Cucumber
  • Couple of salad tomatoes or equivelnt baby/plum tomatoes
  • Juice of 2 lemons
  • Olive Oil
  • Parsley

Method

  • Peel the outer layer of the leek. Cut the leek into slices.and put in a bowl.
  • Pour/squeeze the lemon juice over the leeks in the bowl. Stir and leave the lemon juice to start softening the leeks slightly
  • Chop the tomato and cucumber into cubes (I occasionally slice them if I'm in a hurry
  • Finely chop the parsley
  • Put the cut tomato, cucumber into the bowl with the leeks. Cover with the chopped parsley, and add olive oil, salt and pepper
  • That's your salad ready! Have a quick taste and see if you think it needs any more any extra salt, pepper, lemon or parsley.

  • Eat it!
